YOGURT GRANOLA PARFAIT CUPS

Parfait cups are so fancy; they always remind me of oceanside resorts and palm trees (not that I’ve had the chance to enjoy them in such locales; one can daydream, right?). However, one never sees a sloppily thrown-together parfait. How do they get the layers just so? Well, I’m going to share with you the trick for creating enviable layers and the recipe for my favorite yogurt granola parfait cups.

2½ cups vanilla yogurt, divided (see note)
1 cup granola, divided
1 cup berries, divided
2 teaspoons honey, divided

1. Pipe about ½ cup yogurt into the bottom of a glass (see note), sprinkle in ¼ cup of the granola and then ¼ cup of the berries, and finally, pipe in another ¼ cup of yogurt. Repeat to prepare a second glass of parfait.
2. Drizzle 1 teaspoon of the honey onto each glass, on top of the yogurt, then top each glass with ¼ cup of the remaining granola and then ¼ cup of the remaining berries. Serve.

       NOTES

I like using vanilla yogurt in this recipe, but any plain or flavored yogurt would work. To get the beautiful layers of yogurt, spoon the yogurt into a resealable plastic bag and then cut a bottom corner off the bag (yay—you’ve just made a piping bag), and then squeeze the yogurt into the glass.
