English Muffins


Pepper Jack Cheese

In a hurry most mornings? So am I! During the morning hustle and bustle, I sometimes don’t have more than a few minutes to spare (if that), and so having breakfast sandwiches in the freezer solves the breakfast question. These sandwiches are super convenient; they only take a few minutes to warm up, so you’ll have breakfast in a flash.

4 English muffins (I like to use whole wheat or multigrain; see note)
6 slices uncooked bacon
1 tablespoon unsalted butter
4 large eggs
¼ teaspoon salt

4 slices pepper jack cheese (see note)

1. Toast the English muffins and set aside. Line a large plate with three layered pieces of paper towel, place the bacon slices on the paper towel, and place two additional pieces of paper towel on top of the bacon. Microwave on HIGH for 3 minutes, then check for doneness and microwave in 30-second intervals until the desired level is reached. (I like crispy bacon, so I usually microwave it for 4 to 5 minutes total, or two to four extra intervals of heating.)
2. In a medium skillet over medium-high heat, melt the butter, then crack the eggs into the pan and loosely stir them around to break the yolks. Scramble them, sprinkle in the salt, then let them cook, without stirring, for 3 minutes. Remove from the heat. With a spatula, cut the eggs into four wedges, as you would slice a pie into quarters.
3. To assemble the sandwiches, place a piece of cheese on the bottom half of an English muffin, top with one-quarter of the eggs and 1½ slices of bacon, then place the top of the English muffin on top and press down. Repeat until all four sandwiches are assembled
4. Tightly wrap with plastic wrap and then place all four sandwiches in a gallon-size freezer bag and label “Breakfast Sandwiches” and the date they were made (see note).
5. To warm the sandwiches: Remove from the freezer and remove the bag and plastic wrap. Wrap each sandwich in a piece of paper towel and microwave on HIGH for 2 minutes. Allow to sit in the microwave for 1 minute, then remove and enjoy.

These sandwiches taste great on multigrain English muffins, but any bread you have on hand will work. I like to use pepper Jack cheese because it gives the sandwich a little flavor kick, but Cheddar or American cheese also work well. The sandwiches will keep in the freezer for up to 2 months
